Simple, delicious and so modifiable, just use what veges you have and add to the basic pasta recipe.  I got this recipe off a tv show years ago, and it’s a great stand by for when you want something quick and easy but still yummy for your tummy.

DF only if you leave out the parmesan.

400gm pasta (I use spaghetti or linguine)

2-6 cloves garlic (if you love it, use lots) peeled and smooshed

1 onion chopped

olive oil for frying

1 red capsicum sliced

2 large courgettes sliced.  You could also use, brocollini, brussel sprouts, eggplant, asparagus, mushrooms, fresh tomatoes, add some olives….

red chilli (pinch of flakes or 1-2 fresh) chillies are optional

1/4 cup of breadcrumbs

1/4 to 1/2 cup of parmesan or grana padano (finely grated)

1/4 to 1/2 cup of fresh parsley chopped

 

Cook pasta, and while it is cooking – fry onions and garlic in olive oil till soft, then add capsicum and courgettes (or whatever veges you are using) and chillies, and cook until veges are done.

Drain pasta, stir in the vegetables, and then stir through the breadcrumbs, parmesan and parsley.

Voila, done, peasant pasta ready to eat.  Serve with a yummy salad.

This pasta dish is a dry dish, not soupy or saucy.
